I believe "Iron Knights Castle Entryway", "Iron Knights Castle Courtyard", and "Iron Knights Armory" are correct as title-names to the places. It indicates or emphasizes an association to the Iron Knights rather than their possession of it, e.g. Flyers Team Bus.

On the other hand, you could make a case for it belonging to either the Iron Knights or to one Iron Knight (Pestus or historically/legendarily to one knight at a time). In those cases it would end with s' or 's, respectively.

I think it's fine any of the three ways as long as it's consistent, which it is currently. In real life, such things are often determined by long practice.

Yeah, that isn't an error. While the title for an individual is Iron Knight, they are almost always referred to as 'Iron Knights.' As touched on by Mylor, it indicates association to that name.

On the Cory Imprinted Shield it states that it is "Noblility Only"

That should be Nobility.
